I've never made fried chicken, and although I own a waffle iron, I've only used it once in the last 5 years. But then last week in North Carolina we had some delicious Chicken & Waffles at Beasley's Chicken & Honey, so when I came across a "Grain-Free Waffles" recipe the other day, I thought I might see if I could find a good "Fried-Free Chicken" recipe to go with the "Grain-Free Waffles", and then try my hand at a healthier version of chicken and waffles.
Not only did it work, it was delicious!
I used regular organic milk for the waffles instead of almond milk, and I used maple syrup where it calls for maple syrup or honey.
Here is the recipe I used for the chicken. The changes I made to it were:
(1) I omitted the onion,
(2) I substituted Panko bread crumbs for regular bread crumbs, and
(3) I used boneless skinless chicken breasts instead of bone-in skin-on breasts, thighs, and drumsticks.
Next time I'll kick it up even more with a bit more cayenne and maybe some chipotle in the coating. I served the chicken & waffles with a side of pure maple syrup and a side of Deke's wing sauce (using Frank's Red Hot cayenne hot sauce as a base), and a simple spinach salad with grape tomatoes and avocado. SUPER yum!
Socializing while cruising, so vital! I am tracking your AIS as you enter Cattle Pass this morning at one hour past peak ebb current. You are early to the party but you did bring plenty of horsepower. Whenever I transit Cattle Pass I try to be near slack or with the current, but the waters there are so confused. The falling tide carried you south quite nicely, i saw 12.7 knots! I notice you run the West shore of San Juan Island frequently, how is the sea state today?
This morning as we came around into Speiden Channel, we decided we probably had some time before the weather picked up, and since we’d seen SO many orcas yesterday on the west side of San Juan, we wanted to maybe get another look (and have a longer cruise home…another reason we go that way often).
Conditions there were: (1) we saw three more orcas, and (2) started out nice but about half way down picked up to about 4-6 ft (the reason we turned into Cattle Pass when we did). 🙂
Cattle Pass was waves over current and not the most comfortable ride, but it was quite a bit better than hanging out in the Strait all the way around the bottom of Lopez. This boat is fantastic!
